Dr. Byron Chaves is an Assistant Professor and Food Safety Extension Specialist. Dr. Chaves
received his PhD in Food Microbiology from Texas Tech University. His expertise is in postharvest food safety of foods of animal origin. His research focuses on the design and application of chemical, physical, and biological
strategies to mitigate pathogen contamination
in beef, pork, and poultry, as well as methodologies to better detect microbial contamination in these commodities.

Dr. Chaves also provides food safety and sanitation training for the food industry, including GMP, HACCP, and FSMA courses
